Yum!

Mmm...yeah, we had corned beef and cabbage for supper. And let me tell you, it was GOOD! Really good! We also had potatoes, carrots, and Irish Soda bread. Mom said the bread recipe she went with sounded like it was more tasty than authentic, which was fine with us. It was something like a big scone or biscuit with raisins in it. So all of it was really good, even the cabbage wasn't too bad, cooked in the corned beef broth and eaten with the corned beef, I wasn't expecting to like it that much.

And did I mention, it was really good? :)

I'm almost finished sewing my dress. I think all I have left to do is hem it, but I need to check. And if that's all, I should be able to finish it tonight and post some pictures tomorrow.

So who had Irish food for supper? Or did you all stubbornly eat something totally not Irish? :)

We had corned beef and red potatoes...yum! No cabbage this time though.

We had broccoli soup, and it was green :) But I had to do a bunch of campaigning tonight so I didn't even get to enjoy it :(

Yea campaigning.
My Dad is a politician....or something like that. And he is working to get our town a new mayor. So last night I had to run around our town handing out slips of paper to unhappy people who had to get off the couch (horrors) to come and answer me at the door and tell them to vote for TJ.....Moral of the story...Not fun.

I can't believe I forgot to cook the cabbage... :(

I don't like it boiled to death for the same length of time that the corned beef takes to cook, so I leave it to the last minute. Of course, I was trying to come up with an additional vegetable because it seemed like we were short on food. Gee, wonder why!

Now I need to find another corned beef on the clearance shelf before the cabbage turns to mush. :)

Wait, you had cabbage that you bought to go with the corned beef, and then forgot to cook it? That's funny!

Yeah, I think Mom took the beef out and wrapped it in foil, and then cooked the cabbage in the broth on the stove.

Hmm, corned beef on clearance...that sounds like a good idea. I really liked it!

And what else am I going to do with a whole head of cabbage? I mean, I like slaw, but not THAT much. :)

I think your mom takes the same approach as I do to cooking the cabbage because of our childhood experiences. You really don't want to know what cabbage looks and tastes like when it's been in the pan for three hours!

Or, if you're sick of corned beef, get a chuck roast and make beef barley soup. Add the cabbage, shredded roughly, at the end. It's got to be the right kind of beef barley soup, though, not the recipe on the barley box.
