Stir-fry

Supper tonight was stir-fry...great for using stuff up! I saw we had the leftovers of a bag of these in the freezer that we hadn't ever finished because they are just too sticky and filling to eat by themselves. We usually get the popcorn chicken in a big bag from Costco for a Sunday night dinner, but we had decided to try the bourbon-glazed ones instead.

Anyway, we had some of those left, so I got the idea to use them as the meat in a stir-fry, because they're basically like the chicken pieces in sesame chicken that you get from the Chinese restaurant. So I sliced up some carrots, celery, found some green pepper and green beans in the freezer, and also added a handful of chopped swiss chard at the end. I put soy sauce, sesame oil, red pepper flakes, and sesame seeds in it...I really wasn't sure how it was going to taste. I knew it would be okay, but I wasn't sure past that. So I was pleasantly surprised that it worked wonderfully! Yummy! I think we should keep some of those chicken nuggets on hand just for stir-fry!

I didn't tell Mom what I was making, and she was trying to figure out what I was making that didn't need to have any meat thawed! (I thawed the chicken nuggets in the microwave right before I added them)...I told her it wasn't going to be vegetarian, but I think she was still rather worried about it! ;)
